Easy Like Sunday Morning

Do you push at warp speed all week trying to get everything on your list done, yet you never do? On Sunday, I change it up a bit, fix a special breakfast and savor a slower pace. My mother was a southern cook, so everything she made was mostly from scratch. My love for cooking and baking comes from her.

Since blueberries are in season, I made a fresh blueberry sauce. Frozen blueberries work just as well, so watch for them on sale and keep a couple of bags in the freezer. The recipe for Greek Yogurt with Warm Black and Blueberry Sauce, which you’ll find on our Bring on Breakfast Pinterest board, calls for both blackberries and blueberries. I  had only blues, so that’s what I used.

The color of the sauce becomes a gorgeous deep blue-black as it cooks. It takes only about 15 minutes from start to finish. To serve simply but elegantly, use a parfait glass that allows you to see the layers. Alternate layers of Greek yogurt with the blueberry sauce and your favorite granola or chopped nuts/seeds. You’ll get rave reviews!

Besides the eye candy and great taste, don’t miss these nutrition bonuses.
