Portobello Mushroom Pizza Recipe: Quick Snack or Lunch for One or Many
Here’s a simple portobello mushroom pizza recipe you can personalize for a fast lunch or snack. Each member of your family can create and enjoy their own personalized pizza.

And these stuffed portobello mushroom pizzas are fun to make because you can create them any way your taste buds pull you.
- Sauce or no sauce
- Regular cheese, lowfat cheese, vegan cheese
- Spicy or not
- Fresh herbs, dried herbs or both
- Fresh tomatoes or not
- Meat or meatless
When you’re serving a group, have everyone create their perfect idea of a personalized portobello pizza. It’s fun and gets everyone involved.
I made the mushrooms in the photo with Trader Joe’s jarred brushetta and Trader Joe’s mozzarella balls. Then I sprinkled them with reduced-fat white cheddar cheese and some fresh basil and parsley.
Sometimes I skip the brushetta or tomato sauce and use fresh slices of tomatoes. So yummy!
Here’s how to clean your mushroom
If you’re not used to cooking with portobello mushrooms, they might be a bit intimidating. But no worries – they’re very easy to deal with.
- Start with a large portobello mushroom cap deep enough for filling.
- Remove the stem with a sharp knife.
- Clean both sides of the mushroom with a damp cloth or brush.
- Use the edge of a spoon to gently scrape out the dark gills inside the cap.
- Pat the mushroom dry before cooking it.
Portobello Mushroom Pizza
Ingredients
- Large or medium-sized portobello mushrooms
- Tomato bruchetta or jarred spaghetti sauce
- tomato slices or any veggies on hand
- Cheese
- Fresh or dried herbs or a combination of both
Instructions
- Preheat oven to 350°F.
- Remove the stems from the mushrooms. Scrape the gills out with a spoon. Gently wash the mushrooms and pat dry.
- Place each mushroom on a rack inside a roasting pan. Fill with your choice of tomato sauce or brushetta and cheese. Sprinkle with dried oregano or other herbs if desired.
- Bake for 15 minutes or until the mushroom is softened and the cheese is well melted. If desired, sprinkle with fresh basil or other herbs after removing from the oven.

Do you have any nutritional stats on this for calories?
I don’t use a lot of sauce or cheese, so if I make a small one, it runs about 60 or so calories. A large one with more cheese could be double that.
