Smoked Salmon Frittata

Ingredients

  • 8 large eggs
  • 1/4 cup nonfat milk
  • 3 gloves garlic, crushed
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp extra virgin olive oil
  • 1 medium tomato, sliced
  • 1/2 cup thinly sliced red onion
  • 1 scallion, chopped
  • 3 ounces goat cheese, in small pieces
  • 1 Tbsp fresh dill, chopped or 1 tsp dried dill
  • 4 ounces smoked salmon or lox
  • Capers for garnish, optional

Instructions

  • Preheat broiler to high.
  • Whisk together eggs, milk, garlic, salt and pepper.
  • Heat oil in a 9-inch oven-proof skillet over medium heat. Cover the bottom of the pan with sliced tomatoes and onions. Overlap as necessary.
  • Sprinkle with the chopped scallion, bits of goat cheese, dill, and salmon.
  • Pour the egg mixture into the pan. Cook about 5 minutes or until eggs are partially set.
  • Transfer skillet to the broiler about 5 inches from the heat. Broil 2 - 3 minutes or until browned.
  • If desired, serve each piece sprinkled with capers.
