Easy Wasabi Salmon

Ingredients

  • 4 tablespoons lower sodium soy sauce
  • 2 teaspoons freshly grated ginger
  • 1 tablespoon lime juice
  • 2 teaspoon wasabi paste, divided
  • 3 tablespoons honey
  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons light mayonnaise

Instructions

  • Preheat the oven to 350°F.
  • In a small bowl, make the marinade by whisking together the soy sauce, ginger, lime juice, 1 teaspoon of the wasabi paste and the honey.
  • Place the salmon and the marinade in a plastic bag with a zipper seal. Marinate in the refrigerator for 15 - 30 minutes, but not longer.
  • Place the marinated salmon fillets on a broiler pan. Discard the plastic bag with the remaining marinade.
  • Bake for 20 minutes or until the salmon flakes with a fork (generally about 10 minutes per inch of thickness.
  • While the salmon is baking, mix together the light mayonnaise and the remaining 1 teaspoon of wasabi paste. Serve with the salmon.

Notes

Feel free to use jarred ginger instead of freshly grated ginger.
